Pound 2 garlic cloves, 1 tablespoon of paprika, 1 tablespoon of
cumin, ½ tablespoon coriander seeds, ½ tablespoon
chili powder, 2 tablespoons parsley, 1 tablespoon mint and 2 tablespoons
of cilantro in a mortar to form a paste. Work in ½ cup butter
until well blended.
Slice two small or one large Rouge in half. Remove seeds and strings.
Smear butter generously over flesh.
Place the squash in a baking dish with ½ inch of water.
Cover with foil and bake at 375 for 40 minutes or until squash is
tender.
