Slice the top ½ inch of a pumpkin to make a lid. Remove
the seeds and rub the cavity with salt and pepper.
Sauté diced red pepper. Mix in mascarpone cheese or heavy
cream. Add goat cheese to taste. Ladle mixture into cavity. Garnish
with one sage leave. Replace lid.
Bake in pan at 350 until tender - 35 to 45 minutes. Take care not
to over cook or the squash might split and collapse in the oven. |
